CZM did it back in the day, and he explained how to do it (somewhat). The problem is I have no idea where that information is :)

czm just played the demo through gtv then connected to the gtv server and recorded the bits he wanted

Just use Timescale or maybe this..

Take your video camera and hit 'record' when the shot/scene comes up that you want then transfer it to PC.

this is what i do,

bind "F4" "timescale 60;wait 1960;timescale 1"

hit f4 in a demo and it wil fast forward 7 min and 50 sec

to calculate it:
(com_maxfps 125 !!!)
7:50 = 470 sec
(sec/timescale)*250
(470/60)*250=~1960
